Acorn Squash Roasted with Brown Butter is our holiday side dish

I can’t think of a better way to start the holiday season than with this baked pumpkin with browned butter. It’s easy, delicious, and the perfect side dish to any festive gathering. When I was a kid, my mom used to make pumpkin with butter and brown sugar, and this unique version is well worth the Christmas dinner.

The real secret of this recipe is premium European salted butter. It’s really my go-to ingredient in many of my recipes lately, but especially this squash. When combined with brown sugar and hazelnuts, with a hint of spice, yes, it’s perfect like no other. Trust me. But wait… you actually brown the butter to give it this warm, delicious flavor. I know, YUM.

So obviously this side dish needs to be on all your holiday tables. It’s a classic dish taken up a notch, with just a little twist and some really tasty butter. After all, I don’t really think you can properly make the holidays without butter. In addition to the main meal, it is also the star of the show. Really, think about it, you need butter for that crust, butter for that mashed potato, butter for the barbecue, butter for the gravy, and the scrolls? Yes, they definitely need butter — see, absolutely stardom.

And, I have to mention how easy this is to make – the oven does all the work for you and the ingredients are so simple you probably have on hand right now. Correct! Simplicity is always good at this time of year. Scroll to the formula.
