shirred eggs and eggs Benedict are two of my favorite egg breakfasts. It’s also probably one of my top 5 favorite recipes that I’ve posted so far. I certainly don’t make it every day. It takes a lot more time than regular bacon and eggs. But it’s a weekend treat!

Eggs Benedict Wellness Mama Style

Ever heard of eggs Benedict? Ever actually tried them? I wasn’t too familiar with them before watching The Runaway Bride, so I had to look for them.

To make eggs Benedict, bake an English muffin and top it with Canadian bacon or ham, a hard-boiled egg, and a little Hollandaise sauce. Hollandaise sauce is a creamy yellow sauce made with egg yolks, lemon juice, butter and a pinch of salt. It’s very good.

As it turns out, eggs Benedict is actually one of my husband’s favorites before the cereal. I decided to modify it to fit our lifestyle. I’m so glad I did because it turned out so delicious.

Ingredients in Eggs Benedict

  • Bread – instead of English muffins I use my coconut flour cookies.
  • Meat – traditionally, the recipe calls for Canadian bacon or ham. I used both, but also bacon and sausage. It’s delicious in every way.
  • Eggs – The poached eggs were delicious but needed a little more attention than I normally would. More often, I fry a sunny layer on the pan.
  • Sauce – Hollandaise. It really should be Hollandaise. It’s not too complicated, so I do it myself. I love grilled salmon and asparagus.

Making eggs Benedict

Eggs benedict is one of those meals with lots of moving parts. There’s a lot going on at once, with a good amount of assembly on the plate. It’s really not one of those meals that I can make when helping with homework or arguments. For those reasons, I don’t do it often. When I do that, I have no regrets. It is very satisfying and filling.

Make the coconut dough biscuits and bacon first. They can be taken and set aside until needed. You can even roast the bacon in the oven on a baking tray while the cookies are cooking.

Next make the Hollandaise and leave it on the stove to keep warm. It doesn’t take long to make, but it’s also not well preserved so don’t make it ahead of time.

The last thing to cook is the eggs. If you are someone who likes to boil eggs, you can absolutely do it that way. This is a short guide. I usually cook for a crowd, though, so I find it’s a lot quicker to just cook an entire sunny grill.

The only thing left is to stack and serve everything. Top a cookie with a piece of bacon in half, an egg, and Hollandaise bread. When it’s gardening season, I cover the Hollandaise with a layer of chives.

These eggs Benedict are now everyone’s favorite in our house, and I hope you try them out!

Seedless Eggs Benedict Recipe

No beads in the classic style. This recipe uses coconut flour cookies instead of the traditional English muffin.

Instruct

  • Prepare the coconut flour biscuits and bake according to the recipe instructions.

  • Cut each bacon slice in half.

  • Cook the bacon and set it aside.

  • Make hollandaise sauce.

  • In a greased or buttered pan, break the eggs into layers carefully so as not to break the yolks.

  • Cook only until the yolks have thickened and are still soft.

  • Repeat if needed until all eggs are cooked.

  • Place a cookie on a plate.

  • Top with an egg, cheese if using, two halves of bacon and a tablespoon of hollandaise.

  • Serve immediately.

Note

If you prefer to cook bacon in the oven, you can save time and bake it on the baking sheet at the same time your cookies are baking.
You can also use two of the cookies to make a breakfast sandwich and omit the hollandaise sauce. We also created a variation using breakfast sausages.
