If you’ve never eaten a cake with olive oil, it not only adds a delightful flavor, but adds an extra layer of moisture that butter could never do. Just make sure to use fresh and high-quality olive oil, as it is really the flavor-centric.
This exceptional olive oil cake, adapted from the classic Mina Stone recipe, is dense, spongy and perfectly seasoned with cinnamon and cloves. It’s delicious any time of year, but the orange/clove combo also makes it perfect for the holidays. The best part about this cake is that it’s not too sweet, which can be overwhelming after a big meal.
